When it comes to lowits good to have a low amount of debt; best to have a low number of divorces; great to have low cholesterol and triglycerides. If you believe all the fad diets, you should also be doing low carb eating. Recent overwhelming evidence from the largest nutritional study of a population ever done is quite convincing to the contrary.

According to results from The China Study by Dr. T. Colin Campbell (Director of Nutritional Sciences at Cornell University) we should be saying NO to LOW carb diets.

Now that I have your attention, let me explain in detail. While it is good to stay away from white flour, white sugar and foods that are processed, we absolutely need to say YES to a diet rich in fruits, vegetables and grains.

With the current rash of low carb diets, what replaces the carbs? If you answeredmore animal protein and fats, you are correct! All food is composed of the three macro nutrients, Fat, Carbohydrate and Protein. If you decrease carbohydates then you must increase proteins and fats. In our culture, this means an increase in flesh foods/meats or dairy. Since the vegetables/legumes that contain protein also contain complex carbohydrates, they are minimized in the popular low carb diets.

I will admit that many of us who undertake these low carb diets will lose weight. This is what has made this low carb concept so popular. My concern with these diets is the long term effects of eating high animal protein along with fats. This is evidenced by The China Study. Results from this study found the incidence of cancer is very localized in China. Dr. Campbell looked at the diets of people in those areas where cancer was very prevalent. It also happens the amount of animal protein that is eaten is very localized too. Some regions of China report eating almost no animal protein and while other regions report protein making up about 20% of the diet. Prior to the study, the assumption was those impoverished areas with almost no meat in the diet would be one and the same areas with high cancer rates. To Dr. Campbells surprise, as he grew up on a dairy farm, those people who ate the most animal proteins had the highest rate of cancer. There was a 100% correlation; we can say it was statistically significant! Through animal testing, the researchers arrived at the reason for the high protein and cancer connection. One group of rats was exposed to aflatoxin, a cancer causing mold toxin, while given a diet high in animal protein. Another group was given a high complex carbohydrate diet with vegetable protein while being exposed to the aflatoxin. The results were the same as the people studied in Chinathose with high animal protein diets had the highest cancer levels and those who ate the high complex carb diets were actually protected against the cancer.

At this point, I need to make the distinction that animal protein and plant proteins were entirely different in the occurrence of cancer. After more testing and research, the mechanism for these cancer findings was discovered. In the liver, two chemical pathways for detoxification are called Phase I and Phase II. In Phase I, the liver takes a toxin and transforms it into an intermediate toxin. This toxin is more dangerous and toxic than it was in the first place. Phase II is then supposed to catch this intermediate toxin and make it safe. The Phase I path is inducible, which means toxins and certain other substances get the liver all revved up! It turns out that animal proteins rev up this Phase I path and so do cancer causing agents like mold toxin. Excess toxins in our environment today do not mix well with a high animal protein diet. For me, this demystifies why the rate of cancer has been increasing. With our current Low Carb Craze, cancer is certain to continue its rampant growth!
